Basashi
From Kuma-i
Basashi (馬刺し)is a horsemeat which is especially produced and eaten in Kumamoto(some places such as Nagano and some Tohoku-Area also eats Basashi but Kumamoto is currently the particular place for Basashi). This meat has lower-fat and lower-calorie compairing to pork and beef. Also it contains a lot of iron and glycogen, and these will prevent from anemic. Since the improvement in preservation of transportation, a few amount of Basashi is now shipped to Tokyo and some other cities, for some ethnic restaurants.
However, there are in fact a strong opposition in the U.S. for slaughtering a horse, and on September 8th 2006, the bill passed the House of Representitive and killing a horse for meat became an illegal action. History
Basashi has a long history. People started eating this type of meat since Lord Kiyomasa Kato's(1562-1611 a man ruled Kumamoto) era. People at that time considered this meat as meat which can relieve people from exhaustion, and still people consider this meat is good for the health.

Kumamoto is the particular place where you can taste this type of meat. Especially in Kumamoto-City downtown, you are able to find many restaurants which serves Basashi dishes.

How Are They Eaten?
Generally, Basashi is eaten in raw: thinly sliced and dip in soysause with grated ginger (Cf. Sashimi with Wasabi).
Recipes
Here is a basic Basashi Recepis.(similar to sashimi)
- Hachimori(鉢盛) for 1 person
100grams of Basashi
cucumber
onion
1.Get 100grams of Basashi(hourse meat) and thinly slice it into many pieces.
2.Put the sliced meat onto a large plate.
3.Put sliced cucumbers on the meat. (also onions but it's optional)
4.Pour sashimi-soy sauce on the meat and the cucumbers.
-ground ginger is also a good choice for adding more flavor into soy sauce
You DO NOT have to heat up any food, just eat as cold and fresh.
